What is it about Ramadan that just makes me want to have all the Rooh Afza in the world?! But also all the cakes too, so thought I’d put them both together to make one of my favourite Ramadan vibes. Hope you enjoy it 🙂
Ingredients
FOR THE CAKES
100g plain flour
100g castor sugar
100g melted butter
1 tsp baking powder
60g ground pistachios
60g ground almonds
2 eggs
2 tsp milk
Splash of green colouring
1 tsp pistachio syrup
FOR THE ROSE CREAM
100ml whipped cream
2 tbsp icing sugar
1 tsp rose syrup
Method
1. Preheat the oven to 160 degrees C
2. Sift the flour, sugar and baking powder and mix together.
3. Add in the ground pistachios and almonds and mix
4. Add in the melted butter and mix
5. Add in the eggs one by one, constantly mixing until light and fluffy
6. Add in the milk and then add in a splash of green colouring and pistachio syrup (if you dont have the colouring and pistachio syrup, its fine)
7. Bake for 20 mins
8. Whilst baking, prepare the rose cream by mixing together whipping cream, icing sugar and rose syrup.
9. Once the cake is ready, let it cool on a wiring rack. I cut the cake into circles using a cookie cutter but you can leave as ia if you want.
10. Pipe the rose cream in between the cake and on top and garnish with more pistachios and roses
