As the name suggests, he will want to marry you after eating this. Yes it’s that good and what’s even better, whilst he’s down on one knee your chin view is going to be looking very attractive because this is actually a low carb meal! Win win!!
DISCLAIMER – this recipe will not make men less stupid and might not result in him bending the knee (GOT reference #ifyouknowyouknow). If he doesn’t marry you please blame your man and not my recipe (but at least you’ll still have a banging meal!)
Ingredients
1 Tbsp olive oil
3-4 large chicken breasts (I used leg pieces and drumsticks)
Salt and Pepper
2 cloves garlic (minced)
1 teaspoon oregano
1 tsp chilli flakes (may add only 1/2 teaspoon for less spice but you know you like it spicy!)
100ml cup chicken stock
1/2 cup heavy cream
1/2 cup sundried tomatoes (chopped)
1/4 – 1/2 cup freshly grated mozzarella
Fresh basil (stolen from your mum’s garden) to garnish
1 tsp baking powder
Method
- Preheat oven to 180 degrees. In a large oven-safe skillet heat oil over medium-high heat. Season the chicken generously with salt and pepper and sear until golden, about 4-5 minutes per side. Set chicken aside in a separate plate.
- Return the skillet to medium heat. Add garlic and cook for 1 minute. Stir in the thyme, chilli flakes, chicken stock, and heavy cream. Cook for 5 minutes, stirring continuously. Stir in the sundried tomatoes and cheese.
- Return the chicken to the skillet and sprinkle baking powder over the chicken. Then spoon the sauce all over the chicken generously. Bake until chicken is cooked through — about 15-18 minutes.
- Garnish with basil and grated mozzarella cheese, if so desired. (PS. you do desire!)
